They Cook... Green Curry, Prawns in Tamarind, and Spicy Papaya Salad

We love taking a cooking class in the cities we visit. It gives us a real sense of the local culture and bringing home recipes helps us keep the memories alive. This time around, we learned to make green curry, fry up prawns in a tamarind sauce, and grind up a spicy papaya salad. Here are the photos and recipes from the class.

Note: we highly recommend the half day class we took with Tamarind Tree Cooking School. Lin (the chef) and Tom (the host) are incredibly friendly. Everyone gets to make their own individual meal, cooking with local gas stoves and charcoal heated clay pots. Most of the photos we are sharing were taken by Tom and the recipes are from Lin.

Keep in mind that some ingredients may be difficult to find outside of Thailand. You can substitute it as you like as well as adjust the spiciness level. Diane cooked everything without any spicy chilies, but added more fish sauce, garlic and coconut milk as she loves those flavors. Ian loves it spicy so he added more chillies than is typical - but not to true Thai levels. If you are vegetarian or just don’t like chicken, substitute it with something else!
